I've heard two stories for this one, and searching the net gets me no closer.

Three dog night ( in one case attributed to Australian Aborigines, in the 
other case attributed to Eskimos) came about because on especially cold 
nights these nomadic people needed three dogs to keep from freezing.

Regardless of origin, the concept is the same on both sides of the equator.
