I like my damascus the only way most of us can make it today



and my chocolate -  SWEET (even with the paraffin and - ugh - rat feces)


Seems there are no simple answers....



Chocolate liquor( the solid or semi plastic food prepared by finely grinding
caco nibs) - 50% min 60% max cacao fat by weight



Sweet Chocolate  not less than 15% Chocolate liquor  - therefore only  7.5%
- 9% cacao fat  


Milk  Chocolate not less  than  10% Chocolate liquor

Sec. 163.111  Chocolate liquor.

    (a) Description. (1) Chocolate liquor is the solid or semiplastic 
food prepared by finely grinding cacao nibs. The fat content of the food 
may be adjusted by adding one or more of the optional ingredients 
specified in paragraph (b)(1) of this section to the cacao nibs. 
Chocolate liquor contains not less than 50 percent nor more than 60 
percent by weight of cacao fat as determined by the method prescribed 
in 
Sec. 163.5(b).

	Didn't mean to imply that.  Exactly the opposite, in fact. 
The only one the kids looked up from that list was the rat feces,
simply because it was the grossest one to them.  It could very well
have been a typo - 8% instead of 80%, or was based on something
else entirely.
