How about that Persian bloke  Muhammad ibn Musa al-Khwarizmi, who wrote an important book in 820 which pulled together and refined bits of earlier Greek and Islamic mathematics, and coined the term "al Jebr" (algebra - meaning "re-union") Many modern mathematicians cite him as one of the greatest.
