Evan,Not with just a General class License. You would need general class VE credentials just to handle Technician class I completed test materials.
You can view and handle Technician material with a General class License and General class ARRL issued VE credentials which requires completion of an open book application.
To view or even handle General and Amateur Extra Class materials requires an Amateur License and applying for the VE credentials.

Hi John,
I currently hold a General class HAM radio license. Will it be possible
for me to serve as a VE coordinator with this certification?
Many Thanks,
