Well, then, how about surströmming? For the uninitiated, it's Baltic
herring, fermented in barrels for a while and then canned. It ferments
some more in the can. It is to lutefisk as kimchi is to sauerkraut. 
Typically it's part of a sandwich with other fermented ingredients, 
such as fillmjölk (fermented milk) or gräddfil (fat fermented milk), 
and frequently washed down with beer, another fermentation product. 

I imagine a dollop of Limburger cheese in the sandwich would go quite
unnoticed. 

It _is_ boat-anchor related: the fishing boats have anchors, so there.
