the "wind holes" are useless beyond removing weight... testing on
mesh aluminum C band dishes found that in winds above a certain
speed the dish behaved like a solid despite being mesh.

It's a different design and intended for a receive-only audience with a rather different feed configuration, but KrakenRF has this funded crowdsourcing campaign for a stamped aluminum 70 cm dish with optional L-Band weather, Inmarsat, or hydrogen line LNA feeds: https://www.crowdsupply.com/krakenrf/discovery-dish/
It will eventually be built out of three stamped sectors with vent holes and is targeted to be <1 kg assembled with one of the receive feed options.
It may not quite be what you want, but is similar, current (soon) production, and should have documentation for various hacking.

I am still looking for a 75 cm aluminum dish. This is the dish that Jon, KØFQA, sold many years ago. Many of us bought them from Jon. The dishes were made of thin aluminum so I don't know how many survived. Jim, KFC uses one on his dual band setup. There are many to be found on the internet from China. They are dirt cheap. Unfortunately, I don't need a thousand or more of them. I lost mine when, in a rush to leave a rover site, I left it by the side of the road a few years ago.
Here are a couple of images from the internet to jog everyone's memory. These are white, the dishes that Jon sold are grey in color but look the same except for the feed horn mount.
