Hi,
The standard telco color code for multiconductor cables is blue/white-white/blue for the first pair, orange/white-white/orange for the second pair, etc (green, brown and slate are the base colors for he next 3 pairs) In your case, I bet the blue/white and white blue pair on the old connector block is the one you're looking for. Hook the red and green of your new RJ-11 block to those wires and check for dial tone. If you push a button on the dial pad and can break the dial tone, you are set, otherwise reverse the connection of red and green and try again.
