One approach that is real easy to accomplish these days is to use an
external drive connected to USB.  You can either buy the entire unit
or you can build one for pretty cheap.  A USB enclosure with either
PATA or SATA interface goes for about $25.  In that you then install a
hard drive of sufficient size to hold all the stuff you want to backup.
Then, when you do the backup, you take this drive out of the cupboard,
plug it in, do the backup, then disconnect it and put it back in the
cupboard or firesafe or take it to work or some other off-site safe place.
