Jon (and anyone else interested),
I concur with Chris's suggestions and offer a further suggestion to help in
viewing...at least for folks with Outlook Express (ver 6, maybe
earlier)...When a message Window is open, from the
Field/Edit/View/Insert/Format/etc. menu bar, select View > Text Size > Fixed
and the message will then be displayed in a fixed width font...works very
nicely *IF* the 'table' was created using Chris's suggestions.

LImit the line length to about 72 chars. If you're formatting it in some
form of WYSIWYG editor, use a fixed-width font such as Courier. When
separating columns, use spaces rather than tabs.
These three methods together should render a table to be displayed in most
textual mail systems in a sane manner.
