Hi Scott,
Multiple  antennas will tend to interact, so try to keep the number down. 
Center fed is better ESPECIALLY in an attic. at the height of an attic, the 
antennas will not exibit much directivity. The rule of thumb  for wire 
antennas has always been the longer the better and the higher the better 
Coax will be easier to run, but may have loss depending on the band. Window 
line will be more versitile. Try not to worry about it just hook up a rig 
and get on the air. You can always make changes later.
My first  HF antenna was a 40 meter dipole less than a foot off of the 
ground!. I had no trouble working Pittsburg and the Southeast. Later the 
dipole went up about 25 feet and was bent to an angle of 70 degrees. Now it 
has been extended into a full wave loop fed with window line. I use it on 
80-10 meters with generally good results.
