Hi, everyone:
The lament "That's not mesh' recently reared its ugly head...again.
It seems a concensus that if every node is not on the same channel,
IT'S NOT MESH!
Well, remember good network design?
Especially the parts about avoiding hidden nodes and exposed nodes?
Yoda: "Forgot about that did you?"
Either of 'hidden' or 'exposed' nodes will destroy a network.
So, what is your design of a 'Mesh Network' given that
all stations must be on the same channel
there must be no hidden nodes
there must be no exposed.
AFAIAC, if you do not accept current practice, build what you think
will work.
Show me a working mesh with all stations on the same channel.
Past practice has shown us what does not work.

p.s. Here is Franklin/Delaware County Ohio's 'Mesh':

Note the multiple 0% NLQs and 0.0 TxMbps.
Look familiar?
