I do similar, but write the info in the upper right corner, where it 
will be covered by postage as each item is processed.

I, too, had an ebay issue when selling years ago.  I finally narrowed 
down who got what, paid for all the returns, et cetera, but one guy 
liked his "incorrect" item so much, he clammed up, and kept it.  What a 
jerk!  Lesson learned, process one item at a time.
