Doesn't matter - that's the seller's choice, not ebay's. Further, it
still allows many people to get a specific piece they are seeking.
However, even the piece-at-a-time approach doesn't mean it has to get
split up. It just requires more bidding. There are several automatic
bid sniping tools available that weren't available a decade or so
back, and of course you can always place a high enough bid early to
make sure you win, if it's that important.
When all else fails - we're still free to choose whether to bid or
not. At the end of the day, I'll come down on the side of having ebay
available as another tool in the quest for whatever. It's not the
be-all, end-all, but has its place. I've been able to obtain numerous
hard-to-find items from non-radio sellers that I had little chance of
finding otherwise. Most were pretty cheap, too.
