If only the RT-68 and PP-112 are to be mounted, then the MT-299/GR is the correct mount. The resulting system is called the AN/VRC-10.
The MT-297/GR is the mount for the RT-68, PP-112, R-110, RT-70, AM-65, and C-435 units that make up the AN/GRC-7. It's my favorite set in this system of radios, but it all weighs about 250 pounds.
The MT-297/GR can be hard to find. I got mine from Fair Radio several years ago. It wasn't in their catalogue, but when I wrote asking if they had one, they did. It was only about $40 plus shipping, a very decent price. The only other place I've seen them in the past few years is the Dayton Hamvention fleamarket.
Regardless of which mount you are seeking, it would likely be worth a call or e-mail to Fair Radio Sales. If you are creating a AN/GRC-7, Fair Radio has the original manual (TM 11-284) for a very reasonable $20.
