For very good reason. Before transistors, it was easier to develop the variable
control voltages required to run a 2 phase induction (servo) motor than the
relative lower voltages needed for DC motors. AC motors also have no 'cogging'
problems or brush noise.

It's easy to get the 90 / 270 degree phase shift, either by tuning the fixed
phase or in the servo amplifier. Two phase also requires only 1 amplifier,
compared to a three phase system.
