My vote for the "most modified" would have to go th the command sets, ARC-5, SCR-274N, xmtrs and receivers. Toss-up as to which particular component was the most butchered (or improved as the case may be).  The "most dismantled for parts" category would probably be the BC-375/191 transmitters and their TUs.  These were widely considered to be unsuitable for use on the ham bands but contained a lot of nice variable caps, coils, dials and other parts.
