Depends on which series you're talking about. Several are still available in the "aluminum" finish you refer to. It's actually bright nickel plating over aluminum, but they are available that way.
More specifically: The MIL-C-26482 Series II and III connectors are available in bright nickel, as are others that Boeing uses in their jets (the BACC series, which also has a MIL equivalent number that I can't recall at the moment).

Are you looking to mate to existing connectors, or create a design of your own?
Either way, I can help. I'm a reseller for mil-spec connectors. However, keep in mind one very important detail: That if you are talking about the MIL-C-26482 series, the II and III parts are not available with solder-cup contacts. They come only with crimp-style (removable) contacts, and the investment required for the special tools to do crimping, insertion, and extraction is not a minor one (we're talking over $300 to get started).
