Running Windows 7 Pro SP1 64 bit here ... 
don't know anything about Ultimate. If 'stereo 
mix' is missing you can download it from www.realtek.com . Under the download tab select 'High 
Definition Audio Codecs 
(Software)'. Check the accept box and click next. Select 32 or 64 bit version as appropriate, download and install.

Greetings all:

A brief update to my original post .. First, thank you Jay - W1VD for the pointers .. that headed me in the 
direction to know what was going on in my case .. After trying Jay's 
instructions; I still could not get a stereo mix
to show up in the audio settings .. Armed with the knowledge of what to google 
search for; I found out that my 
Windows-7 Ultimate setup has audio drivers that are " too current " and will 
not allow what I am wanting to
accomplish .. The solution to do so, is to revert back - to drivers that would 
have been used in Windows-XP SP3,
and there is the possibility that this version of Windows-7 will not allow that 
driver installation to happen.. SO - -
I will leave well enough alone, and not mess up the fastest computer I have 
ever had, and explore other options
such as, audio switching devices to allow for multiple devices to be connected, 
and switch between them as
I need to ..
