In this case there is no intention to tune the ladder line, because it will go to a tuner BEFORE it goes to coax. So it is ok to add more ladder line.
Whenever you see a transmission line changing from one impedance to another (as in case of G5RV) then you should realize there is a purpose to precise lengths. When impedance stays the same the length is arbitrary most of the time.
A doublet requires a good local ground as close to the rig as possible. Many CW ops use them, but they can sometimes be trouble for phone on some bands.
An 88 foot doublet has a nice pattern on 20m - and at your height would be good - but it is harder to tune on 80m, hence your 102 foot arrangement which should still be pretty good. Above 20m, it will have a full nulls in certain directions - that will change on different bands.
I cannot imagine 102 feet tuning on 160m - except with a monster-sized tuner - so be careful with advertising!
Likely you should read some articles on antennas to get a better feel for things - meanwhile try what you have.

Hello all
Ok I have ordered a 160-6 doublet antenna 102 ft long. Well I put the rope
lines up in prep for the antennas arrival and have notice a potential
problem. Well got the ends up at 110 and 115 respectively .... but the
center hangs at 86 ft the antenna comes with 100ft of ladder line ooopsss I
don't have enough. Can you add additional ladder line to the 100 ft of
ladder line I already have before I put it into the tunner with out causing
problems.
regards ray my new ham motto .... " havent seen a 100ft tree I dont want
to stick an antenna in "
