I am a huge fan of Mexican food. But....it's not really healthy for you
unless you cook at home where you can control the amount of fat that is
used. So I'm doing my best to make it at home. I'm just lacking the music
mode! LOL
But I make a really great chicken quesadilla. I cut up boneless chicken
breast with scissors, spray a skillet with PAM and not much if it's a good
non-stick surface. Just a little bit of water also to steam cook it. While
it's cooking, I add in 3 thin sliced green onions and use some to green tops
as well. Since I have to watch the salt content, I only use 1/2 package of
the mexican taco season while that is cooking. I had a red chopped pepper
for color and slice 1 piece of celery to the skillet. If you like mushrooms,
chops those fairly fine and add at the last minute and stir around.
I use my Forman Grill and whole wheat rounds. Lightly add some REAL butter
to both surfaces. It doesn't take much to just add a little taste/crispy
effect to the outside of the round. Spoon in about 3 T. of the chicken mix
and use just a little bit of shredded cheese and you can add just a little
bit of chunky salsa as well. Fold over the round to a 1/2 moon shape and
depending on your grill, you can usually get at least one or 2 more 1/2
rounds on there. Close the lid and lightly grill them. Serve hot.
Now you get a little of everything you like in moderation or less. And you
have greatly reduced the fat content without depriving yourself of a filling
meal. Serve this with a salad and if you think you need rice, we found we
love the Minute Brown Rice. It's very filling and has a nutty type taste to
it.
You've got a great meal in minutes and you don't feel hungry in a couple of
hours either. And super easy clean up. Those are my kind of meals.
