Adam - I guess the drop of WD-40 is the next thing to try. After removing
the screw I tried to gently "work" the knob with the blade of a screwdriver
at the bottom of the knob where it would not show, but nothing. Will keep
trying.

I am pretty sure that the screw inside the hole grips the encoder shaft. It
is possible that the centre hub of the knob is seized onto the shaft. You
may be able to release it by putting a drop of WD-40 or light silicone oil
down the tapped hole in the hub, and leaving it overnight.
