Does the DDS project give any additional info?

I think we can rule out the hexadecimal and Grey variants. Hexadecimal must
be too many pins. The Grey code suggests more than 2 bits (I *think*), since
it guarantees that only adjacent bits change for a single step.

Do the Digikey data sheets show the pinouts for the various types?

I would expect a 3-pin encoder to contain 2 sets of contacts arranged in
quadrature, so you can tell the direction (from which contact closes
'first'). But this is a guess - I don't know what a "2 bit" encoder is.

Hope this helps, or at least doesn't increase the confusion.

I can let you have a 3-pin encoder to try if you need one. It is probably a
bit large for your purposes (about the size of a non-miniature
potentiometer).
