Lee,
Forgot to mention one other point. You did not mention whether you are using the SB-401 and SB-301 in "Transceive" mode, the SB-301 controlling the SB-401. This can also lead to hum with bad cables or hum coming from the SB-301. From what you said the condition of the SB-301 this is highly possible.

I purchased an Electrovoice Microphone for my Heathkit SB-401 on ebay
about 2 years ago. I have had nothing but good reports on the quality
of the audio except for a very slight hum in the background. I
purchased the microphone for 45 dollars. Here is a picture of my
microphone and heathkit station (see address below). I purchased the
SB-401 on EBAY. It was not working when I received it but was easy to
fix. I found the SB-301 half buried in the dirt under a lawn mower at a
friend's house. I cleaned it up, plugged it in and it worked. The
SB220 amp in the picture needs tubes. The SB200 works fine. I picked up
the SB200 at an auction for 25 dollars in working condition. The station
takes up a lot of desk space but it makes a good heater in the winter
time.
