I have used a product called Barkeeper's Friend.  Most
supermarkets have it in the same section where they
have things like Ajax, Comet, etc.  Wet the knob, wet
a toothbrush, and dip the toothbrush in a small pile
of the product.

Then brush the knob very hard.  This usually will
bring back the original color.  Actually, it wears
away the layer of discoloration.

If it doesn't work, then all you are out is about $3
for the can.  This stuff works wonders on brass,
silver, copper, steel, and all sorts of metals.  I
keep a can of it around at all times and use it on
just about anything metal that I need to clean.
