 For my curiosity, would you provide the link to  the instructions for adjusting the tuning capacitor.
I am curious about why you say the plates should never be bent and 
 and why the instructions are Wrong. 

I've tuned many sp-600's and the dial accuracy away from the end points is not always great.

I've notice that the end plates of each section of the caps are slotted so that it looks like
 the plates are sectioned so that they can be bent to fine tune the capacitor.

Of course this has to be done in conjunction with all the sections RF LO and RF tuned inputs.
