Bah Humbug.  Just lash up a couple of 6AS7's or 6080's and have  
regulated supplies for all the voltages but the highest one.  The  
added benefit would be the nice glow of the filaments.

But if you need to investigate the multi-tap transformer idea, contact  
Heyboor transformer company.  They've made very fine replacements of  
specific specs for the Collins 516F-x  S-line power supplies.  Very  
fine work, will ship direct to individual buyers, reasonable prices.
