Bob, I too have two email addresses and I just checked and replying to a email brings up the same address I used.  I don't seem to have the problem you have unless I'm not understanding it.  One thing that I came across in Apple mail was the address window, the buttons were not active when I wanted to post to a group I had set up in mail.  I re-booted the computer and all was ok again.  I just downloaded and installed 10.8 this morning and had not re-booted except for the initial one after install.  You might try that and repair permissions.  Just some thoughts.  Good luck, it seems like this rendition really speeds up things.
