If there is an uninstaller for them, use it. There are other files  
that applications leave behind that their uninstaller will remove,  
such as preferences files (usually in /Library/Preferences) or  
application-specific stuff (/Library/Application\ Support) Not every  
app follows the same rules, and where they drop things varies. And, if  
they had an installer file, there will undoubtedly be a receipt...
