Start by sharing the old disk with the new machine. Can do this via ethernet. Or if you have a firewire cable you can boot the old Mac in target mode (hold "T" while booting) to turn it into an external firewire HD until its turned off.
Then from your new iTunes select File -> Add to Library... and point it at a directory on the old HD where your music can be found. You could point it at the whole HD but iTunes will have to search longer.
While you have the old disk shared, Utilities/Migration Assistant is a very powerful tool for copying all your applications and user particulars from the old machine to the new. Including music.
