[Ham-Mac] VirtualBox help/questions

This sure sounds like it. The iPhone is probably connecting to it through a local Airport, but the firewall to the outside world is doing its job and blocking incoming connections from the outside world. Are you sure you want to expose your VB system to all sorts of Windows virii? Wouldn't it be much better to run the Mac version of Echolink?
