Why do you think you have to have Intel versions of your software?
http://www.apple.com/rosetta/

Apple isn't telling the whole truth when they say, "You’ll never see it, you’ll never configure it, you’ll never have to think about it." Its mostly true and perhaps why Brian feels the need to change his applications. If one makes a clean install of 10.6 then one has to select Custom to install Rosetta. If not then the first time a PowerPC app is launched MacOS will ask to install Rosetta. Will launch Software Update to download it.

I think your old applications will run on the Intel Mac Mini faster than on your eMac.
