I have an older 300G Seagate with both Firewire and USB2 interfaces that
is pretty quiet. Haven't tried to boot from it but believe as a general
rule Firewire drives are bootable.
Having briefly used other external drives I find Firewire to be faster
than the USB2 interface on dual interface drives and the firewire on my
dual interface drive is faster than other USB2-only drives.
Does iMac have an eSATA interface? If so then I think I'd go that way.
