Sadly, your best bet would be running the Windows programs under 
Virtual PC. Actually, your best bet would be using a real PC for the 
PIC development. I do a fair bit of PIC development myself, and it 
simply is the easiest way to go. Which PIC chips are you thinking of 
using?

There is a the Mac Electronics List (MacTron  mailing list) which has 
some PIC related postings from time to time. There was a PIC dev 
platform under development for the Mac at one point, but I lost track 
of how far along it was.
