This would be a function of your e-mail program and I don't think I've ever run into one that allows a subject-line change.  However, some e-mail clients allow a custom action or script - this might allow you to change the subject line.

It replies with a text message.

Unfortunately, it doesn't change the message Subject:

Is there a way to apply a rule to reply to an incoming message with a message in response AND change the Subject: line?
