The restore point is an option, but be *VERY* careful when using restore
points.  If too much has changed since the intended restore point, you
could make the system more unstable if you do a restore.  If you need to
use System Restore, it's best to do restores within a few hours of
creating the restore point.  Beyond that, reliability of a successful
restore diminishes.  Luckily, Windows will usually inform you if a
restore is not successful, but I have run into situations where restores
were succesful (after a few days), but the system was unstable due to
changes not monitored by the System Restore process.

Back to the original question, "How to uninstall IE7", the IE7 installer
should have added itself to the Add/Remove Programs control panel.  I
believe the installer prompts if you want to keep the previous version
of IE in case of problems.  If you selected "No", then there's no easy
way to restore to the previous version of IE.  For reference, IE6
shipped with WinXP and the current version is IE 6.0 SP2.

As was mentioned earlier, it's generally not a good idea to dive into
new software unless you're a "power user" and know how to get yourself
out of trouble...especially when it comes to Microsoft software.  I've
learned quite well to wait for "dot 1" updates before seriously looking
at something.  There are some exceptions, but it's a good rule to
follow.
