   I thought you were scanning it out as an image file and using an OCR to 
convert it to text, which normally creates lines as long as the original
lines AFAIK.

   I don't know what yo are working with, I never heard of text from a scanner,
my two (one an HP 5P) don't do it, but I use LINUX exclusively and it might
actually be the M$ program that operates the scanner has an OCR in it.
(you might be able to change it's line length from 255 to "document lengths")
