More likely the wrong pot...unless you can determine that the pot is
original.

At the moment, my shack has 8 boat anchor receivers representing 8 models
from 6 manufacturers. EVERY one of them exhibits this trait where, on a
scale of 0-10, 0-7 is there for decoration and all of the change occurs
between 7-10. Is this a common trait to all receivers of this vintage, or
have they all had their pots replaced with the wrong type?

Hi Dave....
Yes, that's correct.
I replaced mine and the regular taper pot makes the sensitivity come on
really fast in the last part of the rotation.
I replace that pot twice before I finally woke up to what was happening.
You can probably reverse the taper using some resistors to fake out the
pot.....or use a standard pot and add the resistors to make a reverse taper.
Google how to do it....I've see that somewhere before.

I have a SX-100 MK2 on the bench right now after replacing some bad
capacitors and resistors. I was just getting ready to start alignment and
reviewing some of the old notes gleaned from various reflectors and supplied
courtesy of Roy K1LKY. I ran across a little gem I wasn't aware of. There
is a note stating the RF gain pot which I am taking to be the sensitivity
pot is a reverse log taper pot. Is that correct? I have to replace the one
in mine and used a normal linear taper pot.
