I'd bet the audio xfmr is very good for this use.
You don't need either 500 or 5K outputs, so why bother!
Seems the very last thing to change and only if you are doing cosmetics for an ebay posting!
I wouldn't pull all the tubes.  You'd have to remember where they came from and you might break something.
Later yes, but right now the filament load is not relevant to checking the pwr xfmr.
I'm betting the coax was to send the IF out to a panadapter or such, or to send something in to use the rx IF...maybe a converter of some sort.
