Arm with a switch is what I came across on one M28. I think it was a standard TTY part.
Want sophistication? How about an ultrasonic or laser rangefinder like used in manufacturing and printing plants.
Perhaps there could be an arm resting on the paper roll that is connected
to the shaft of a pot. As the paper is depleted, the pot rotates. You can
then use analog comparators to determine various paper levels. If you run
the pot into an ADC on a microcontroller, you could do some math to
determine how many meters of paper are left on the spool.
