Thanks to all who have replied - I did a quick test plugging audio in from my computer instead (just treating the plug as mono) and lo and behold, I'm receiving copy!  Definitely a phone cable thing that I was improperly wiring (I also think my computer as a source will be more reliable compared to my phone haha.)  The whirring sounds of receiving hard copy are simply amazing!

Eventually I'll clean up my connections (and boost my loop voltage - starting with 12V but will try the DC-DC boost or work up to a heavy-duty supply).  Oh, and improvise the moving paper roll.
Now, on to ordering suitable teletype paper...
