I’ve also been interested in playing with dialup again. (Hated in back then!) Though in these modern times, I have no dial service at all to my house. 

Has anyone kludged together any sort of FXO apparatus to some inexpensive or free service to get dial-out ability over Internet?

I have a pile of 56K external modems that I’ve been rescuing from e-waste, I’m going to be wanting to find them new homes later this year.
