I like the model of the Chappe semaphore telegraph relay station.  There's a wonderful episode in the Count of Monte Cristo where the count conducts a man-in -the-middle attack by bribing the operator of one of the relay stations to insert a message in order to take revenge on one of his former oppressors by misleading him into a very bad investment.  It's a really nice, and a very early example of the damage a man-in-the-middle attack can do.

The baudot keyboard is also neat, as is the Haeglin B211 cypher machie.  The latter appears to be a multi-rotor machine like the Enigma, but with a tape-print mechanism.
