Finding that page saved me a lifetime.
It implies a mix of quite a few different things, but they are all easy
things.
1- The stand, I started with the cardboard stand, and now I am making a
simple but nice wooden stand.
2- I trigger the camera remotely. I installed a special non-invasive
software on the camera memory card, which enabled triggering it using a USB
charger with a push button. Dead easy to do, it is explained here

3- I take the pics in B&W, with a lot of manual settings, I take care to
eliminate all the reflections on the glass, and take the pics in a more or
less dark room. It usually takes me like 10 minutes to perfectly take the
first one, and from that is click, page, click page... a matter of seconds.
4- I use ScanTailor latest version

I already know what settings to touch, and it is a matter of a couple
minutes to bulk process hundreths of pics
5- Then I use Photoshop droplets to batch process a few details like curves,
to make clear white and darks black basically, and autolevels for the images
on the page. Lots of trickst there too, but as they are done in bulk, they
are fast too.
The final outcome is a nearly perfect grayscale JPG which can be used to
make a PDF or DjVU.
Of course as there are so many details it takes time to learn all the
tricks.
Finally, you have also a forum where to check others experiences, but if you
need any guidance, just ask me, I already went over all the hassle :D
