"sniping" (as in sniper rifle, not the snipe bird) is the practice of
using a program or service that automatically bids on an item just a
few seconds before the close of the auction. You give the
program/service your ebay credentials and the max bid you're willing
to place on the item and it places this bid just seconds before the
auction closes.
Anyone who is manually bidding on an auction won't have time to
respond to the "snipe" bid because its so late in the game that there
isn't time to manipulate the web UI and submit your higher offer
before the auction closes.
HOWEVER, any existing manual bids that you've specified that haven't
yet reached their maximum bid are still in play when someone "snipes"
on the auction. If your manually entered max bid is higher than the
sniper's bid, then you STILL WIN.
The practice of sniping doesn't guarantee anything.
Manually bidding doesn't "ruin" anything.
