The one with the dial is a TWX machine, and if the parts are all there, 
you can connect it to a phone line and dial into it using a modem. The 
machine can receive from another modem, create punched paper tape while 
in "Local" mode, and then send to another machine with its internal 
modem.  This would be the best machine for demonstrations and similar 
events, since it will "come to life" automagically when you dial the 
phone number it's attached to.

Assuming, of course, that it's still in working order.

The machine without the dial was probably connected to a computer. 
You'll need to check if it has a "current loop" adapter, or some other 
way of hooking up to a serial port on a computer, to make it run.
