I would try the following:

1. Check the LED to make sure it is actually working (For me it's usually the silly things like this or polarity)
2. verify you have the leads on the coil the right way.   One coil induces current into the other so if they are both going the same way you get no oscillation.
3. put a scope or meter with duty cycle on the coil leads and verify you have oscillation.  This will also tell you your duty cycle and you can guess if it is enough to make the LED visible.


Sounds like fun stuff!

Any ideas about how to get this to work would be appreciated.

I'm using a 3-Volt white LED, and green core from a dead CFL, and about 20 turns of double wire.

Perhaps I should give that one a try instead.
