Unfortunately, it is very hard for computers to extract the information in a PDF. The text can be pulled out, but the columns and other data organization are lost. I’ve worked on search engines for years, and parsing PDF is a mess. Turning a PDF back into structured text is like turning hamburger back into a cow.
If you expect to use the data for anything in the future, save it in a data format. CSV is good, XML (ADIF) is good, JSON can be good, whatever.
Extracting a log from a PDF would likely require reading the document and typing in the data. If you want a visual record that cannot be changed, PDF is a good choice.
