Hello Tim.
I feel your pain, as I was recently forced away from my shack as I recovered from a medical procedure.
Follow the doc's advice. They may or may not know best, but don't tempt fate.
As an aside a friend of mine had a pace maker/defibrillator installed. Doc told him same thing your doc advised. Upon further research of the implanted device, the manufacturer confirmed that the implanted device was immune to RF at the frequencies us hams use (at least the HF bands). Might be worth while to do some research on your own and then consult with your doctor. Just my two cents worth.
With respect to remote control of your station. I have employed many methods, many of those mentioned in this thread. My fall back this time around (for reasons beyond the scope of this thread) is to employ TeamViewer software at the station and also on a laptop or desktop in the other room, etc. You can download a free copy of Teamviwer as long as you do not use it commercially. Teamviewer supports audio (stereo no less!) so you don't have to use Skype. No muss or fuss setting it up (no port forwarding or DMZing). At the station end the PC will need to be hooked up to the rig for CAT control, audio in/out and a Mic connection. Easy enough to do. The most difficult part is setting up audio levels. The plus side is that once you've got the audio all worked out, the digital stuff like FT8 is a snap to impliment.
If you would like some mentoring, help, advice or just bounce ideas, I'm all ears and willing to guide you.
Congratulations on the new heart and lease on life, Happy New Year!
