[Elecraft] k3-kat500-pr6-DigiKeyer via 2 "Y" cable in "cascade" should be OK ?

That should be OK but quite the rats nest. :) I would suggest either
an HD15 breakout board from Winford Engineering or see if you can find
one of the LDG RCA breakout boxes. I have one of these and it works
great for accessing ACCY connections.
