Of course that matters for broadcast AM or FM, but ...
When you cut off the frequencies at 3 KHz, you cut off almost all those overtones. If SSB is even a tiny bit mis-tuned, all the overtones are also out of tune.
Cheap electret mics are quite good. Once you pay enough for decent build quality, they are all the same for communications purposes. They have limitations, but those just don't matter for communications (only 80 dB SNR, uneven high frequency response, compression with high dynamic range).
